1 cup spelt flour
1/2 cup teff flour
1/2 cup amaranth flour
1 teaspoon active dry yeast
1 teaspoon salt
1 teaspoon honey or maple syrup
3/4 cup warm water (110°F)
2 tablespoons olive oil, plus more for greasing
Instructions
In a small bowl, dissolve yeast and honey in warm water; let stand 5 minutes until frothy.
In a large bowl, whisk together spelt, teff, and amaranth flours with salt.
Add yeast mixture and olive oil to dry ingredients; stir until a dough forms.
Turn dough onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
Place dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour until doubled.
Preheat oven to 475°F (245°C) with a pizza stone or inverted baking sheet inside.
Divide dough into two balls; on a floured surface, roll each into a 12-inch circle.
