Ingredients
- 1½ cups all-purpose flour
- 3½ teaspoons baking powder
- 1 tablespoon white sugar
- ¼ teaspoon salt
- 1¼ cups milk
- 1 large egg
- 3 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- Make a well in the center and pour in milk, egg, melted butter, and vanilla. Mix until just combined; batter should be slightly lumpy.
- Heat a griddle or nonstick pan over medium heat. Lightly grease with butter or oil.
- Pour about ¼ cup batter for each pancake onto the hot surface. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
- Flip and cook until golden brown on the other side, about 1-2 minutes more. Serve immediately with butter and maple syrup.
Tips
- Do not overmix the batter; lumps are okay for fluffy pancakes.
- Keep pancakes warm in a 200°F oven while cooking remaining batches.
- Store leftover pancakes in the refrigerator for up to 3 days or freeze for up to 1 month.
