Ingredients
4 slices bacon
4 large eggs
2 tablespoons milk
Salt and black pepper to taste
2 tablespoons unsalted butter
2 cups frozen hash browns (or 1 large potato, shredded and squeezed dry)
2 slices bread (white or whole wheat)
2 tablespoons vegetable oil
Instructions
Cook bacon in a large skillet over medium heat until crispy, about 6-8 minutes. Transfer to paper towels to drain. Pour off all but 1 tablespoon of bacon fat from the skillet.
In a bowl, whisk eggs with milk, salt, and pepper until frothy. Set aside.
In the same skillet, add vegetable oil and heat over medium-high heat. Add hash browns in an even layer. Cook without stirring for 4-5 minutes until golden brown on the bottom. Flip and cook another 4-5 minutes until crispy. Season with salt and pepper. Transfer to plates.
Reduce heat to medium-low. Add 1 tablespoon butter to the skillet. Pour in egg mixture. Let set for 30 seconds, then gently stir with a spatula, pushing cooked eggs to the center. Cook until just set but still soft, about 2-3 minutes. Remove from heat.
Toast bread slices. Spread remaining 1 tablespoon butter on toast.
Assemble platters: divide hash browns, scrambled eggs, bacon, and buttered toast between two plates. Serve immediately.
Tips
For extra crispy hash browns, squeeze out as much moisture as possible before cooking.
Customize with your favorite breakfast sides like fresh fruit or sausage links.
Leftovers can be stored in the fridge for up to 1 day; reheat in a skillet.
