Ingredients
4 slices thick-cut bacon
4 large eggs
2 tablespoons unsalted butter
2 slices white or whole wheat bread
Salt and freshly ground black pepper to taste
Optional: chopped fresh chives for garnish
Instructions
Place bacon slices in a cold non-stick skillet. Cook over medium heat, turning occasionally, until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate.
Pour off all but 1 tablespoon of bacon fat from the skillet (or wipe clean and add 1 tablespoon butter). Return skillet to medium heat.
Crack eggs into the skillet, being careful not to break yolks. Cook until whites are set but yolks are still runny, about 3-4 minutes. Season with salt and pepper.
While eggs cook, toast bread slices until golden. Spread remaining 1 tablespoon butter on toast.
Divide bacon, eggs, and toast between two plates. Garnish eggs with chives if desired. Serve immediately.
Tips
For over-easy eggs, flip gently and cook 30 seconds more.
Leftover bacon can be stored in the fridge for up to 3 days.
