Ingredients
1 cup (2 sticks) unsalted butter, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 cups all-purpose flour
1/4 teaspoon salt
1 cup finely ground almonds (almond flour or meal)
1/2 cup powdered sugar (for coating)
Instructions
Preheat oven to 325°F (165°C). Line baking sheets with parchment paper.
In a large bowl, beat butter and granulated sugar until light and fluffy, about 2-3 minutes.
Mix in vanilla and almond extracts.
In a separate bowl, whisk together flour, salt, and ground almonds. Gradually add to butter mixture, mixing until just combined. Dough will be soft but not sticky.
Shape dough into 1-inch balls, then roll each into a 3-inch log. Place on prepared baking sheets and curve into crescent shapes.
Bake for 12-15 minutes, until edges are lightly golden. Cool on baking sheets for 5 minutes, then transfer to wire racks.
While still warm, roll cookies in powdered sugar. Let cool completely, then roll again in powdered sugar for a snowy coating.
Tips
For best flavor, toast the ground almonds in a dry skillet over medium heat until fragrant, then cool before using.
Store cookies in an airtight container at room temperature for up to 2 weeks.
These cookies freeze well; roll in powdered sugar after thawing.
