  2. In a small saucepan, combine honey, piloncillo, lime juice, cinnamon, and salt. Cook over medium heat, stirring, until the piloncillo dissolves and the mixture comes to a gentle boil. Let it boil for 1 minute without stirring.
  3. Remove the honey mixture from heat and quickly pour it over the toasted amaranth. Add nuts and raisins if using. Stir well to coat evenly.
  4. Transfer the mixture to a 8x8-inch baking dish lined with parchment paper. Press firmly and evenly with a spatula or another piece of parchment.
  5. Let cool for about 15 minutes, then cut into bars while still slightly warm. Allow to cool completely before serving.
