Ingredients
1 tablespoon vegetable oil
1/2 pound ground pork
2 cups coleslaw mix (shredded cabbage and carrots)
2 green onions, thinly sliced
1 tablespoon soy sauce
1 teaspoon grated fresh ginger
1/2 teaspoon garlic powder
1/4 teaspoon white pepper
8 egg roll wrappers
1 tablespoon water (for sealing)
Cooking spray
Instructions
Heat oil in a skillet over medium-high heat. Add ground pork and cook until browned, breaking it up, about 4 minutes.
Add coleslaw mix, green onions, soy sauce, ginger, garlic powder, and white pepper. Cook, stirring, until vegetables are wilted, about 2 minutes. Remove from heat and let cool slightly.
Lay an egg roll wrapper on a clean surface with a corner pointing toward you. Place about 2 tablespoons of filling in the center. Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Moisten the top corner with water to seal. Repeat with remaining wrappers.
Preheat air fryer to 375°F (190°C). Lightly spray the egg rolls with cooking spray.
Place egg rolls in a single layer in the air fryer basket, leaving space between them. Cook for 8-10 minutes, flipping halfway, until golden brown and crispy.
Let cool for 2 minutes before serving.
Tips
Serve with sweet chili sauce or duck sauce for dipping.
Leftover egg rolls can be reheated in the air fryer at 350°F for 3-4 minutes.
To make ahead, assemble egg rolls and refrigerate for up to 4 hours before air frying.
