1 lb fresh green beans, trimmed
3 tablespoons soy sauce
2 tablespoons vinegar (cane or white)
1/2 cup water
4 cloves garlic, minced
1/2 teaspoon whole black peppercorns
1 bay leaf
2 tablespoons cooking oil
Instructions
Heat oil in a skillet or wok over medium heat. Add garlic and cook until fragrant, about 30 seconds.
Add green beans and stir-fry for 2 minutes.
Pour in soy sauce, vinegar, water, peppercorns, and bay leaf. Do not stir; let it boil without stirring for 2 minutes to cook off the vinegar's sharpness.
Stir, then reduce heat to low, cover, and simmer for 8-10 minutes until green beans are tender but still crisp.
Remove bay leaf. Serve hot as a side dish.
